Wellness Wednesday: Our First Vegan Cinco de Mayo

Happy Cinco de Mayo!! Ever since I moved to Texas many moons ago, we always celebrated Cinco de Mayo like a religious holiday, from the food, to the mariachi music, and of course TEQUILLA!  It wasn’t until after Ken and I got married that I found out the true meaning behind my favorite “holiday”.  Being the scholarly gentleman that he is, he schooled me and anyone who would listen on the history behind Cinco de Mayo.  As a matter of fact, I’m sure he is on YouTube or Instagram now making a video.

A few fun facts about Cinco de Mayo:

  • Cinco de Mayo is not a celebration of Mexican Independence Day
  • Cinco de Mayo commemorates of a single battle (The Battle of Puebla) fought between 2,000 Indigenous Mexicans and 6,000 French troops
  • The Mexicans defeated the French in the battle May 5, 1862 and the French withdrew from Mexico
  • Cinco de Mayo is not a widespread celebration in Mexico, it’s primarily observed in the state of Puebla

Ok, enough of the history lesson, let’s get into this food.  As we continue to evolve on this wellness journey, we decided to switch things up this year and veganize Cinco de Mayo.  The meat and dairy based ingredients in Mexican recipes can easily be swapped out for plant-based options. It is easy to incorporate vegetables and fruit into many Mexican dishes as well.  This will be our first time trying out this menu and cannot wait to taste and share the results!
